Poke-San Founders, Michael and Joseph, are two Johnson & Wales University graduates that were college roommates who dreamed of one day opening their own concept. They both gained experience in large scale, high-end establishments all over Miami in such examples as Wynwood Kitchen & Bar, The Standard, Makoto, Versace Mansion, Gotham Steak, Le Zoo, and others along the way. Living in a post-covid world, they both realized it was time to branch out and get back to basics in a small concept where they can both touch every plate that is prepared, and put all their acquired skills and knowledge of the restaurant industry into each and every dish.  Out of this realization Poke-San was born. They are hyper focused on ensuring that each and every ingredient is of the highest quality and cared for with strict proper technique.
